EASY FILLED DATE COOKIES 
1 c. soft butter
2 c. brown sugar
2 eggs
1/2 c. buttermilk
1 tsp. vanilla
3 1/2 c. flour
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. baking soda

Prepare as for any cookie dough. Best if chilled.

FILLING:

2 c. chopped dates
3/4 c. sugar
3/4 c. water
2 tbsp. flour

Cook slowly to prevent scorching, until dates are tender, add:

1 tsp. butter
1/2 tsp. vanilla

Cool - add 1/2 c. nuts (optional). Drop cookie dough by teaspoon on cookie sheet. Put on dab of date filling, then another teaspoon cookie dough. Bake 10-12 minutes at 400 degrees - until brown and done. Makes 2 1/2 dozen.
