BITE-SIZE APPLESAUCE MUFFINS 
1/2 c. butter, softened
1/2 c. sugar
2 eggs
3/4 c. applesauce
1 3/4 c. all purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 c. butter, melted
1/4 c. sugar
1/8 tsp. ground cinnamon

Cream 1/2 cup butter; gradually add 1/2 cup sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in applesauce. Combine flour, baking powder, and salt; add to creamed mixture, and stir just until moistened. Spoon batter into lightly greased miniature muffin pans, filling 2/3 full. Bake at 425 degrees for 15 minutes or until done. Remove from pan immediately and dip muffin tops in melted butter. Combine 1/4 cup sugar and cinnamon; sprinkle sugar mixture over top of each muffin. Yields about 3 1/2 dozen.
