ZESTY ITALIAN SALAD 
1 head cauliflower
1 or 2 bunches broccoli
1 1/2 c. frozen peas
8 oz. shredded mozzarella cheese
1 can or fresh mushrooms, sliced
1 c. salted cashews
1 lg. bottle Zesty Italian dressing
1 can ripe olives, quartered

Mix together all but cashews. Refrigerate overnight. Add cashews just before serving.
