MOZZARELLA CHICKEN 
2 tbsp. butter
2 lg. whole chicken breasts, deboned & skinned
1/2 lb. fresh mushrooms, sliced
1 1/2 cans Cheddar cheese soup
1/4 c. grated Mozzarella cheese
A few drops lemon juice
Dash of celery seed
Pinch of basil

Preheat oven to 375 degrees. Heat butter in large pan. Add chicken and sprinkle with lemon juice. Cover and cook 2 minutes each side over low heat. Season well. Add mushrooms and herbs, cook covered 3 to 4 minutes. Mix in cheese soup and transfer to oven proof dish. Sprinkle with cheese and bake 6 to 7 minutes in oven.
