BLUEBERRY PUDDING WITH LEMON
SAUCE
 
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. soft shortening
3/4 c. sugar
1 egg
3/4 c. milk
1 tsp. vanilla
1 (15 oz.) can blueberries, drained

Sift together into bowl flour, baking powder and salt. Add shortening, sugar, egg, milk and vanilla. Beat until smooth. Add blueberries and mix in gently with a spoon. Pour into greased 9 inch square pan. Bake at 350 degrees for 25 to 30 minutes. Makes 9 servings.

LEMON SAUCE:

1 c. sugar
3 tsp. cornstarch
2 c. boiling water
4 tsp. butter
1 tsp. grated lemon rind

Boil sugar, cornstarch and water 1 minute. Stir in butter and lemon rind. Serve hot.
