MANDARIN ORANGE SALAD 
1/4 c. sliced almonds
1 tbsp. and 1 tsp. sugar or turbinado sugar

Cook over low heat until sugar melts - do not stir! Transfer to a plate to cool. 1/4 - 1/2 head romaine, chopped 2 stalks celery, chopped 2 green onions, sliced 1 (11-15 oz.) can mandarin oranges, sliced

Combine all but the oranges. 2 tbsp. sugar or turbinado sugar 2 tbsp. vinegar or lemon juice 1 tbsp. parsley 1/2 tsp. salt

Combine and shake well. Chill.

Just before serving, add oranges and nuts to salad ingredients. Pour dressing over all and toss.
