MINI CHEESECAKE DELIGHTS 
1 c. soft butter
3 oz. cream cheese, room temperature

Mix together into soft dough. Make a small ball, about the size of a walnut and press into bottom center of each muffin tin.

FILLING:

1 egg
1 1/2 c. light brown sugar
2 tsp. melted butter
Dash salt
1/2 tbsp. vanilla
1 c. pecans, chopped

Mix above ingredients well and pour over shell (3/4 full). Bake at 350 degrees for 15 minutes, then lower heat to 250 degrees for 10 minutes. Makes 3-4 dozen.
