THE PENAS MEXICAN DRESSING 
8 med. boiled potatoes, cut into cubes
2 lg. onions, chopped fine
12 oz. Cheddar cheese, grated
1 bunch celery, chopped
3 tubes saltine crackers, crunched up
3 cans mild enchilada sauce
Salt, pepper, hot sauce to taste

Using a large baking pan, put a layer of ingredients then pour out moisten with enchilada sauce; repeat this until you run out of ingredients. Put in oven for about 30 minutes at 350 degrees. Does much better if pan has a lid.
