SWEDISH RICE PUDDING 
1 qt. whole milk or 2%
Pinch of salt
1/2 c. uncooked rice
2 cinnamon sticks
2/3 c. sugar
1 1/2 tbsp. butter
Nutmeg
2 tsp. almond extract
1 tsp. vanilla

Place 1 quart milk in double boiler. Add pinch of salt, cinnamon sticks, and uncooked rice.

Cook for 1 to 1 1/2 hours until rice is tender and mixture seems a bit thicker. Then add sugar and butter. Cook 10 minutes longer (should be of thick consistency). Turn off heat and add 2 slightly beaten eggs. Add vanilla and almond. Pour in dish and sprinkle with nutmeg.
