HOPPIN' JOHN | |
2 ham hocks 2 qts. water 2 c. black eye peas 1 c. brown rice 1 bay leaf 1 onion, chopped 1 sm. hot red pepper, crushed Boil ham hocks in the water and stir in peas. Simmer 1 1/2 hours. Stir in uncooked rice, bay leaf, onion and red pepper. Stir once; cover and cook without stirring about 45 minutes until rice is done. Quick Hoppin' John? Well - prepare a cup of instant rice. Add 2 cups canned black-eye peas. Add bacon drippings to suit your taste. Also some chopped onions. If too soupy, drain peas before adding to rice. |
