GREEN TOMATO PICKLES (CADDO) 
2 gal. green tomatoes, quarter
1/2 gal. onions, chopped
5 c. sugar
1/2 gal. vinegar (apple cider)
1/2 c. salt
1 c. green hot peppers, chopped

Add salt to tomatoes and let set while chopping the rest of ingredients. Cut tomatoes and onions in 1/4 inch slices. Add onions, sugar, green peppers to cold vinegar. Bring to boil, simmer a few seconds - put in jars and seal.
