DAD'S FAGGOTS (fuh-gotz') 
Prepare filling as follows: Salt, red & black pepper & fennel seed (to taste, fennel is not optional) 1 1/2 lb. ricotta cheese 4 lg. eggs 1 tbsp. grated Romano cheese

Brown pork, adding seasonings. Pour off grease. Combine beaten eggs and cheeses in bowl and then mix in seasoned sausage.

Assembly: Roll out dough in fairly thin (1/4 inch) rectangle. Spread filling over whole thing, roll up like a jelly roll, tucking ends under and making several slits in top. For the less adventurous, divide dough evenly before rolling and split filling between 2 smaller loaves. Bake at 350 degrees until done (about an hour).
