SWEET POTATOES WITH GARLIC IN
FOIL
 
6 pieces of regular weight aluminum foil, each 10 x 12 inch
6 tbsp. butter, melted
2 lb. sweet potatoes, peeled and cubed
18 cloves garlic, unpeeled
6 sprigs fresh tarragon
Salt and pepper to taste

Preheat oven to 400°F. Spread each foil sheet with a little butter. Divide sweet potatoes, garlic and tarragon equally on the foil pieces and dot with the remaining butter. Salt and pepper to taste.

Seal each packet: Bring together two ends of foil, overlap, and turn down; then roll up the sides. Seal packets tightly with some air space inside for steam. Repeat until all potatoes are wrapped up in packets. Place on a baking sheet and bake for 15 to 20 minutes. Check one parcel to make sure potatoes are cooked and then serve while hot.

Serves 6.

NOTE: Can use parchment paper in place of aluminum foil.
