QUICHE LORRAINE 
1 (9 inch) pie shell
1/4 lb. bacon
1/2 c. finely chopped onions
1/2 lb. Swiss cheese, cut sm.
2 eggs
1 c. milk
1/2 tsp. salt
Dash of nutmeg

Bake pie shell in 350 degree oven for 5 minutes. Fry bacon until crisp. In 1 tbsp. of bacon fat, cook onion slowly until golden. Sprinkle onion, cooked bacon and cut up cheese into pie shell.

Mix remaining ingredients well and pour into pie shell. Bake 10 minutes in 450 degree oven. Reduce temperature to 325 degrees and bake until firm, about 30 minutes. Serve warm or cool. Makes 6 slices.
