SOPAPILLAS 
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
2 tbsp. shortening
1/2 c. warm water
Hot oil for frying

Mix flour, baking powder and salt. Cut in shortening. Add warm water. Knead until smooth. Divide in half. Cover and let stand in warm place 30 minutes or longer. Roll. Cut in squares. Fry in hot oil at 400 degrees until lightly brown on both sides. Squares should puff as they fry. Serve with any Mexican dish or eat along with honey.
