EGG CASSEROLE 
1/2 c. chopped onion
2 tbsp. butter
2 tbsp. flour
1 c. shredded cheese
6 hard-cooked eggs, sliced
1-1/2 c. crushed potato chips
10 to 12 bacon, fried crisp & crumbled
1-1/4 c. milk

Cook onion in butter until tender, but not brown. Blend in flour, add milk, cook stirring until mixture thickens. Add cheese, stir until melted. Place layers of egg slices in 10 x 6 x 1-1/2 inch baking dish. Cover with half of cheese sauce, half of potato chips and half of bacon. Repeat layers. Bake in 350 degree oven about 30 minutes.
