EGG CASSEROLE 
1/2 c. chopped onion
2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1 c. cubed hot Mexican Velveeta
12 slices cooked bacon, crumbled
8 hard boiled eggs, sliced
1 1/2 c. crushed potato chips

Saute onion in butter until tender but not brown. Blend in flour and milk. Cook, stirring constantly, until mixture thickens. Add cheese and stir until melted.

In a 10 x 6 x 1 1/2 inch baking dish layer in order: egg slices, cheese sauce, bacon and potato chips. Bake in 350 degree oven 15 to 20 minutes or until heated through.
