OLD-FASHIONED GERMAN APPLE CAKE 
2 c. flour
2 tsp. cinnamon
1 tsp. baking soda
1 c. vegetable oil
2 c. sugar
2 eggs
1 c. chopped walnuts
4 c. peeled & grated apples

Preheat oven to 350 degrees. Mix together flour, cinnamon, and soda. Mix together oil, sugar and eggs and add to flour, stirring well. Blend in walnuts and apples. Bake in 3 (8 inch) prepared pans for 20 to 25 minutes or until tester inserted in the middle comes out clean.

FROSTING:

3/4 c. sugar
2 tbsp. cornstarch
1 c. milk
1 c. butter
16 oz. cream cheese
1 tsp. vanilla
1/2 c. confectioners' sugar

Mix together sugar and cornstarch. Add milk gradually while stirring. Add butter. Cook in a double boiler, stirring constantly, until thick. Cool mixture. In mixing bowl beat until soft the cream cheese, vanilla and confectioners' sugar. Add cooked mixture and blend well. Decorate cake.
