AMARETTO CHEESECAKE 
CRUST:

1 pkg. Famous chocolate wafers or Oreos with centers removed, about 3/4 pkg.
1/4 c. butter, melted
1.3 c. toasted almonds

Put all crust ingredients in food processor and blend until fine-coarse consistency. Put in a 9-inch spring form pan, that has been prepared with non-stick cooking spray. Press crust (3/4 way up sides of pan and on the bottom), set aside.

FILLING:

4 (8 oz. each) pkgs. cream cheese
4 eggs
1/4 c. whipping cream
1 1/2 c. sugar
1/4 c. amaretto
1 tsp. vanilla
1/2 tsp. almond extract

Rinse out food processor, then add all filling ingredients and blend until smooth. Pour into prepared pan and bake in preheated 325°F oven for 50 to 60 minutes. Remove from oven.

TOPPING:

2 c. sour cream
1/4 c. powdered sugar
1 tsp. vanilla

Mix sour cream, sugar and vanilla together and pour over hot cheese cake to cover evenly. Let cake sit out until cool to room temperature, about 2 hours, then chill overnight.
