APPLE BARS 
2 1/2 c. flour
3/4 tsp. salt
1 c. shortening (lard)
1 egg, separated
Milk
Apples
1 1/2 c. sugar
1/4 tsp. cinnamon
2 tbsp. flour
4 tbsp. tapioca (level)

Mix flour, salt and shortening together. Separate egg and put yolk in measuring cup and add enough milk to make 2/3 cup liquid. Mix with first ingredients. Roll 1/2 of pastry and place on cookie sheet. Cover with sliced apples, then sprinkle mixture of sugar, cinnamon and 2 tablespoons flour and tapioca over apples. Cover with remaining 1/2 of dough, rolled out as for pastry. Beat egg whites until foamy and brush over top of dough. Sprinkle top with cinnamon and sugar. Bake at 425 degrees for 10 minutes, then finish baking at 375 degrees for 20 to 25 minutes. Cut into bars. (Tastes like apple pie.)
