IRISH SODA BREAD | |
1 1/2 c. buttermilk 2 tbsp. butter, melted 1 egg, slightly beaten 1 1/2 c. dark seedless raisins 3 c. all purpose flour 2/3 c. sugar 1 tbsp. double acting baking powder 1 tsp. baking soda 1 tsp. salt Preheat oven to 350 degrees. Grease a 9"x5" loaf pan; set aside. In medium bowl combine buttermilk, butter, egg and raisins; set aside. In large bowl combine dry ingredients; with 2 forks toss together for about one minute. Add buttermilk mixture and mix combined. Spoon into prepared pan. Bake 50 to 55 minutes. Leave in pan 1 minute. Remove to wire rack to cool. Makes 1 loaf about 18 (1/2") slices, about 170 calories per slice. |
