SHEILA'S CARROT CAKE 
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3 c. grated carrots
1 c. chopped pecans (optional)
1 1/2 c. Crisco oil
2 c. sugar
4 eggs

Sift together flour, baking powder, soda, salt and cinnamon. Add carrots and pecans. Cream oil, sugar, and eggs. Mix all together and bake in 9x12 inch loaf pan at 350 degrees. Bake 35 minutes for metal pans; for glass dish, check at 30 minutes.

FROSTING:

1 (8 oz.) Philadelphia cream cheese
1/2 stick butter, softened
1 box confectioners' sugar
1 tsp. vanilla

Mix cream cheese and butter. Add confectioners' sugar. Then add vanilla. Mix and frost cooled cake.
