SPOONED CORN 
1 can (15 oz.) cream style corn
1 c. yellow cornmeal
1/2 tsp. salt
1/2 tsp. baking soda
1 egg
3/4 c. milk
1 whole onion, chopped fine
1/2 c. oil
1/2 to 1 jalapeno pepper, minced
1 lb. Longhorn Colby cheese

Mix all ingredients together; pour in a greased casserole dish. Bake at 350 degrees for 40 minutes. Serves 10-12.
