CHICKEN CACCIATORE | |
2 cloves chopped garlic 1 sm. chopped onion 1 c. tomato paste, 1 c. water 1/2 c. chopped red or green bell pepper 1 c. sliced raw mushrooms 1 tsp. oregano 1/2 tsp. basil 1/4 c. wine Chicken pieces of choice Brown onion and garlic in 1 tablespoon oil in large fry pan. Saute pepper and mushrooms. Add rest of ingredients to make sauce. Add chicken, cook over low heat covered until chicken is tender, about 45 minutes to an hour. Serve over rice or spaghetti. |
