CHICKEN CACCIATORE 
8 chicken thighs or 1 fryer, cut up
1 med. onion, chopped
1 sm. can mushrooms
1/2 c. flour
1 tsp. salt
1/8 tsp. pepper
1/4 c. butter
1 can tomato sauce
1/2 - 1 1/2 c. dry red wine or sherry

Put flour, salt and pepper in a paper bag and shake chicken in it. Saute in hot fat until well browned. Arrange chicken in 9"x13" casserole dish. Mix remaining ingredients and pour over chicken. Cover and bake for 30 to 40 minutes or until tender at 325 degrees.
