CHICKEN POT PIE 
1 tbsp. butter
1 sm. onion
1/4 c. celery (optional)
1 tsp. salt
1/2 tsp. pepper
1/4 c. flour
2 c. boiling water
2 tsp. chicken base
1 bag frozen peas & carrots
2 c. cooked, cubed chicken
1 pkg. refrigerator biscuits (or make biscuits from scratch)

Saute onion in butter; (1/4 cup celery, optional). When onion is opaque, add 1 teaspoon salt, 1/2 teaspoon pepper, 1/4 cup flour and blend. Add chicken stock and heat stirring frequently until thickened. Add peas and carrots and chicken. Remove from heat. Spread biscuits over the top and place in preheated oven. Oven heat and cooking time is according to biscuit directions.
