BASIC OMELET 
3 eggs
1/2 tbsp. cream or rich milk (or 1/4 tsp. water per egg)
Dash salt and pepper
1/2 tsp. butter per egg
Oil for cooking

Beat eggs, cream and seasoning together to froth. Add small bits butter while continuing to beat. Let mixture stand 10 minutes. Brush pan with oil and heat until smokes; remove until smoking stops. Return to heat and pour in egg mixture. Lift egg from side to allow liquid to pan.
