DESSERT OMELET 
4 eggs, separated
1/4 c. sugar
2 tbsp. clarified butter
Pinch of salt
1 tsp. water

Cream egg yolks with sugar; set aside. Add water and salt to egg whites and beat until stiff. Fold yolk mixture into egg whites. Melt clarified butter in divided skillet omelet pan. Follow directions as in Basic Omelet, adding 1 of the fillings below.
