MICROWAVE CHICKEN AND RICE
CASSEROLE
 
2 to 4 boned, skinned chicken breasts chopped into bite sized chunks
1 can cream of chicken soup
2/3 c. Minute Rice
1 c. milk
1 pkg. onion soup mix
1 can of mushrooms (or fresh mushrooms)
Grated cheddar cheese for garnish
Optional: 2 tbsp. sour cream

Mix all ingredients and microwave, covered, for 15 minutes, stirring every five minutes. Let sit for 10 minutes. Grate cheese on top.

Since microwave ovens vary in power, you may need to adjust your cooking time.
