WHITE CHRISTMAS PIE 
1 cooked pie shell
1/2 c. sugar
1/4 c. flour
1 envelope unflavored gelatin
1/2 tsp. salt
1 3/4 c. milk
3 egg whites
1/4 tsp. cream of tartar
1/2 tsp. almond extract
1 tsp. vanilla
1/2 c. sugar
1/2 c. whipping cream
1 can coconut

Mix together sugar, flour, gelatin, salt, and milk in top of double boiler. Cook over simmering water until thick. Cool completely. Beat egg whites, cream of tartar, almond and vanilla extracts until soft peaks form. Beat in sugar, 1 tablespoon at a time, until stiff peaks form.

Whip the cream until thick. Fold cream into cooled mixture, then fold in egg whites. Pour into pie shell. Sprinkle coconut on top. Enjoy! Serves 6.
