DOWN EAST POTATOES 
6 med. potatoes
1 stick butter
2 c. cheddar cheese, grated
1/2 minced onion
2 c. sour cream
Salt and pepper to taste

Boil potatoes in skin, cool and refrigerate overnight. In heavy pot, melt butter and add cheese, onion, sour cream and seasonings. Mix well. Remove skins from potatoes and grate. Combine grated potatoes with sauce and pour into 1 1/2 quart casserole. Bake at 350 degrees for 35 to 45 minutes. Serves 8.
