PASTA WITH SWEET PEPPER CONFETTI 
5 oz. cooked spaghetti
1 lg. red onion, thinly sliced
1/2 c. shredded red pepper
1/2 c. shredded green pepper
1/2 c. shredded yellow pepper
1/2 c. shredded carrot
1/2 c. light mayonnaise
Juice of 1 lemon or lime
Basil and oregano to taste
Paprika to taste
Hot red pepper flakes to taste
Salt and ground black pepper to taste
2 tsp. butter

Combine onion, peppers, and carrot; saute lightly with 2 teaspoons butter in non-stick skillet. Add mayonnaise, lemon, and spices, and spaghetti. Heat gently covered, about 4-5 minutes. OPTIONAL: Parmesan cheese when it is served.
