CONFETTI MARINATED PEPPERS 
3 lg. bell peppers (one each of red, green and yellow) cut in strips
1 purple onion, sliced thin
1/8 c. olive oil
1 tbsp. vinegar
1 tbsp. honey
A little salt, to taste

Put onion and peppers in a shallow dish. After combining the dressing ingredients, shake well until mixed. Pour over vegetables and stir to coat. Chill in refrigerator for 30 minutes before serving. Colorful and healthful. Nice for backyard picnic, or take along covered dish.

Good idea but the purple onion.... NO! Tooooo much onion taste... will try again with a white or yellow onion... the marinade tastes good but is way too overpowered by that onion!
