LEMON SQUARES 
1 c. (2 sticks) sweet butter, softened
2 c. plus 1 tbsp. sifted, all purpose flour
1/2 c. confectioners sugar
4 lg. eggs, at room temperature
2 c. granulated sugar
Grated rind of 1 lg. lemon
6 tbsp. lemon juice (fresh)
1/2 tsp. baking powder
Sifted confectioners sugar

Preheat oven to 325 degrees. Grease a 9 x 13 baking pan. Set aside. Beat together butter, 2 cups of flour, and the 1/2 cup of confectioner's sugar until fluffy. Scrap mixture into prepared pan and smooth into a thin layer covering bottom. Bake 15 minutes. Meanwhile, beat eggs and sugar until light. Add rind, lemon juice and mix together. Sprinkle the 1 tablespoons flour and 1/2 teaspoon baking powder over all and combine well again. Pour lemon mixture into crust and return to oven to bake another 35 minutes or until set. Let cool, then loosen edges and cut into squares. Makes 2 dozen.
