BAKED BRIE WITH STRAWBERRIES | |
1 (1 to 1 1/2 lb.) unsliced round loaf whole grain bread 1 (1 1/2 to 2 lb.) round Brie cheese with rind, 6 to 8 inches in diameter Fresh strawberries Apple slices Lemon juice Slice 1/2 inch off the top of the bread and save for another use. Cut loaf as directed at right. If necessary, trim cheese into a circle 2 inches smaller than the diameter of the bread. Insert cheese into bread, then wrap in foil. Bake in a 350 degree oven for about 30 minutes or until heated through. Top with strawberries and apple slices dipped in lemon juice. Slice into wedges to serve. Serves 16 to 20. To make a bread shell, insert toothpicks in a circle around the top of the cut loaf, 1 inch from the edges. Use a serrated knife to cut down through the loaf around the toothpicks, leaving a base 1 inch thick. use your fingers to gently remove the center. Use your microwave oven to make baked Brie without the bread. Place 1 (4 1/2 ounce) round Brie cheese, rind removed, in a small non-metal shallow baking dish. Sprinkle with broken pecans or walnuts. Microwave, uncovered, on 100% power (high) about 30 seconds or until the cheese begins to melt and lose its shape. Serve immediately with fresh fruit or unsalted crackers. |
