BANANA BRAN LOAF | |
1 c. mashed ripe bananas (about 2 large) 1/2 c. sugar 1/3 c. liquid vegetable oil butter 2 egg whites 1/3 c. skim milk 1 1/4 c. all-purpose flour 1 c. Quaker Oat Bran hot cereal, uncooked 2 tsp. baking powder 1/2 tsp. baking soda Heat oven to 350 degrees Fahrenheit. Lightly spray 8x4-inch or 9x5-inch loaf pan with vegetable oil cooking spray or oil lightly. Combine bananas, sugar, butter, egg whites and milk; mix well. Add combined flour, oat bran, baking powder and baking soda, mixing just until moistened. Pour into prepared pan. Bake 55 to 60 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes in pan; remove to wire rack. Cool completely. TIPS: To freeze bread slices: Layer waxed paper between each slice of bread. Wrap securely in foil or place in freezer bag. Seal, label and freeze. To reheat bread slices: Unwrap frozen bread slices; wrap in paper towel. Microwave at high about 30 seconds for each slice, or until warm. Makes 16 servings. |
