CREAM OF BROCCOLI SOUP 
2 tbsp. butter
1 med. onion, chopped
1/2 tsp. curry
5 c. chicken broth
3 bunches broccoli, cut up
1 potato, peeled & diced
1/2 c. heavy cream
Salt & pepper
chives or parsley to garnish

Saute onion in butter. Stir in curry. Bring broth to a boil. Add onion and broccoli and potato. Cover and simmer 30 minutes. Puree in blender. Add cream. Season to taste. Serve hot or cold. Serves 8. Freezes well.
