ZUCCHINI WITH BACON | |
2 1/2 c. zucchini, thinly sliced 1/2 c. sour cream 1 egg yolk, slightly beaten 1 tbsp. flour 1 egg white, stiffly beaten 1 c. Cheddar cheese, shredded 3 slices bacon, crumbled 1/3 c. bread crumbs, tossed with 1 tbsp. melted butter Cook zucchini in small amount of boiling salted water about 5 minutes. Mix together next 3 ingredients and fold in egg white. Layer in 1 quart casserole, half the squash, egg mixture, cheese and bacon. Repeat. Top with bread crumbs. Bake in preheated 350 degree oven for 20 minutes. Serves 2-3. |
