ITALIAN ZUCCHINI AND VEGETABLES 
3-4 lg. zucchini
1 (1 lb.) pkg. frozen broccoli
1 (1 lb.) pkg. frozen cauliflower
1 (1 lb.) pkg. frozen peas
1 lg. onion, chopped
Pinch oregano
4-5 cloves garlic
1 lb. sausage meat
1 lb. ground beef
2 lg. cans crushed tomatoes
Olive oil
Salt and pepper

Clean and cut zucchini into circles (do not peel). Cut up onion and garlic and saute in oil. Add sausage meat and ground beef, lightly browning and breaking up chunks. Add zucchini, simmer and stir for about 10 minutes. Add tomatoes and stir. Add broccoli, cauliflower, basil, oregano, salt, and pepper. When vegetables are cooked firm, add peas and shut off. Serve over rice. Top with grated cheese.
