LIGHT 'N FRUITY PIE 
1 (3 oz.) pkg. Jello brand gelatin (any flavor)
2/3 c. boiling water
2 c. ice cubes
1 (8 oz.) container Cool Whip non-dairy whipped topping
Thawed fruit (optional)
1 pkg. graham cracker crust

SUGGESTED FRUITS:

1 c. fresh raspberries or blueberries
1 c. diced orange sections
Fresh strawberries or banana
1 (8 3/4 oz.) can apricot or sliced peaches, drained
1 (8 1/4 oz.) can crushed pineapple, drained
1 (8 3/4 oz.) can fruit cocktail, drained

Dissolve gelatin completely in boiling water, stirring about 3 minutes. Add ice cubes and stir until gelatin is thickened, about 2 to 3 minutes. Remove any unmelted ice. Using wire whisk, blend in Cool Whip non-dairy whipped topping; then whip until smooth. Fold in fruit. Chill, if necessary, until mixture will mound. Spoon into crust. Chill 3 hours. Garnish if desired.
