CARROTS A LA BUMPS 
4 c. sliced carrots
1/2 c. fresh minced onion
1/4 c. butter
12 Ritz crackers, crushed
3/4 c. shredded Cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper

Cook and mash carrots. Reserve 2/3 cup of liquid that carrots were cooked in.

Saute onions in butter. Add carrots, reserved liquid, crushed crackers, shredded cheese, salt and pepper.

Bake 350 degrees 20 minutes, 8x12 Pyrex. Can be made ahead of time.

Make sure to use Ritz crackers, it makes the dish.

Can reserve 1/4 cup cheese and a little of the crackers for top, but I usually don't.

Even if you don't like carrots, you will love this dish.
