CARROT CASSEROLE 
4 c. cooked carrots, mashed
1 tbsp. grated onion
1/2 c. grated cheese
2 tbsp. mayonnaise
10 Ritz type crackers, crushed
Salt and pepper to taste
10 Ritz crackers (additional)

Combine all ingredients, mix well. Spread in shallow baking dish which has been sprayed with vegetable coating. Crumble additional crackers over top of casserole. Bake at 350 degrees for 20-25 minutes or until golden brown.
