LAYERED CHICKEN CASSEROLE 
1 lg. pkg. chicken breast halves
1 c. celery, chopped
1/2 c. onion, chopped
1/4 c. bell pepper, chopped
2 cans cream of chicken soup, undiluted
8 oz. sour cream
8 oz. pkg. Town House crackers
1/2 stick butter

Cook chicken breast, boiling until tender. Remove meat from bones and chop up. Layer chicken with the next 5 ingredients in a baking pan sprayed with Pam vegetable spray. Make crumbs out of crackers, melt butter, mixing together. Cover with crumb mixture. Bake at 350 degrees for about 40 minutes. Top will be lightly golden brown. This can be cooked the day before needed, refrigerate and reheat in oven just before serving.
