CARROTS AUGRATIN 
3 tbsp. butter
1/3 c. onions, chopped
3 tbsp. flour
1 tsp. salt
1/2 c. milk
1 c. grated Cheddar cheese
4 c. carrots, cooked, chopped
Club crackers, crushed

Melt butter in frying pan and saute chopped onions until tender. Stir in flour and salt. Add milk gradually. Stir until thick. Add grated Cheddar cheese, stir until melted. Add cooked, chopped carrots. Put in a casserole dish. Top with buttered crushed club crackers.

To Make Topping: Melt butter in pan. Add cracker crumbs until mixture resembles crumbs. Bake at 350 degrees uncovered for 1 hour.
