GUACAMOLE 
2 lg. ripe avocados
2 tbsp. lemon juice
3/4 tsp. salt
1/8 tsp. pepper
1 sm. onion, minced
1 sm. tomato, finely diced
2-4 tbsp. mild green chilies, minced or 1-2 tbsp. hot green chilies or 1/8-1/2 tsp. hot pepper sauce, or 1-2 tbsp. jalapeno sauce

Seed, peel and mash avocados. Add lemon juice, salt and pepper. Stir in onion, tomato and chilies or alternative. Refrigerate. Place the avocado pit in the guacamole to keep it from turning black. Remove before serving. Makes 2 1/2 cups.
