PORTER CAKE 
1 c. butter
4 1/2 c. sifted flour
2 1/2 c. packed brown sugar
3 c. seedless raisins
1 1/2 c. sultanas
1 c. chopped cherries, glazed
1 c. chopped mixed candied peel
1 c. chopped blanched almonds
Dash of nutmeg, cinnamon, cloves & allspice
1 c. Guinness Stout
1 tsp. baking soda
4 eggs, slightly beaten with rind & juice of 1 lemon

Cut butter and flour; stir in brown sugar, raisins, sultanas, cherries, peel, nuts and spices. Dissolve soda in Stout. Stir into eggs and lemon. Add dry ingredients, stir until all moist. Turn into greased 9" tube pan. Cover top with waxed paper. Bake at 250 degrees for 3 to 3 1/2 hours. Remove paper last 1/2 hour. Cool 20 minutes.
