SOUR CREAM ENCHILADAS 
1 1/2 lb. ground beef
1 c. chopped green chilies
1/2 c. chopped onion
Salt and pepper to taste
Garlic powder to taste
1 pkg. taco seasoning
1/2 c. water

Brown ground beef. Add chilies, onion, salt, pepper, and garlic powder to taste. Add taco seasoning and water. Simmer 10 minutes.

Then mix 1 (8 oz.) sour cream and 1 can cream of chicken soup. Set aside. Grate 1/2 pound of Cheddar cheese and 1/2 pound Mozzarella cheese.

In microwave, warm 12 flour tortillas. Put a spoon of meat mixture and cheeses. Roll up and put in 9x13 inch dish. Pour sour cream mixture on top. Add rest of cheese on top of sour cream mixture. Cover with foil and bake at 375 degrees for 20-30 minutes. (You may substitute boiled, deboned chicken for ground beef.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
