COMPANY FOR SUPPER SQUASH 
6 lg. yellow squash
2 slices crumbled bacon (fried crisp) (optional)
1 sm. onion, chopped fine
1/2 sm. green pepper, chopped fine
2 tbsp. butter
2 tbsp. sour cream
Salt and pepper to taste
Bread crumbs or shredded sharp Cheddar cheese

Boil whole squash (do not remove skin) in salted water 10-15 minutes. Drain water. Cut squash in half lengthwise. Spoon out meat of squash leaving 1/4 inch shell.

Saute onion and pepper in butter until crisp tender. Mash squash meat. Add onion, pepper in butter. Add sour cream, salt, pepper and bacon. Fill shells. Sprinkle with bread crumbs or shredded cheese. Bake 20 minutes at 375 degrees F. Serves 6-8.
