SQUASH CASSEROLE 
2 lb. squash
Salt and pepper to taste
1/2 stick butter
1 carrot, grated (optional)
1 can cream of chicken mushroom soup
1 onion, diced
1 pkg. Pepperidge Farm stuffing mix

Mix all ingredients with half the stuffing. Pour other half on top and bake in oblong dish for 25-30 minutes at 375 degrees.
