TOMATO-CUCUMBER MARINADE | |
2 med. tomatoes, sliced 1 med. cucumber, peeled and thinly sliced (1 1/4 c.) 1/2 med. onion, thinly sliced and separated into rings (1 c.) ADVANCE PREPARATION: Layer tomatoes, cucumber, and onion in shallow glass dish. 1/2 c. salad oil 1/3 c. vinegar 1 tsp. salt 1 tsp. dried basil, crushed 1 tsp. dried tarragon, crushed 1/8 tsp. pepper Lettuce ADVANCE PREPARATION (continued) : Combine oil, vinegar, salt, basil, tarragon, and pepper; beat well with rotary beater. Pour mixture over vegetables. Cover; refrigerate for 4-6 hours. BEFORE SERVING: Drain vegetables, reserving marinade. Arrange marinated vegetables in lettuce-lined bowl. Pass reserved marinade. Makes 6 servings. |
